1 small head cauliflower, cut into florets (about 4 cups/1 L)
1/3 cup (75 mL) prepared Buffalo wing sauce
1 head Inspired Greens Multileaf Romaine (red/green)
1/2 cup (125 mL) shredded carrots
1/4 cup (60 mL) thinly sliced celery
1/3 cup (75 mL) prepared ranch dressing
3 tbsp (45 mL) crumbled blue cheese
2 tbsp (30 mL) finely chopped chives or green onion
1. Preheat oven to 450°F (230°C).
2. In large bowl, toss cauliflower with Buffalo wing sauce. Spread in single layer on parchment paper–lined baking sheet; bake, tossing halfway through, for 20 to 22 minutes or until tender.
3. Separate romaine lettuce leaves; divide cauliflower among leaves. Top with carrots and celery; drizzle with ranch dressing. Sprinkle cheese and chives over top. To serve, roll up into wraps.
If desired, substitute ground beef for cauliflower; sauté in skillet until cooked through and stir in Buffalo wing sauce.
