apple & Chickpea

Loaded with satisfying chickpeas and crisp apples in a light yogurt dressing, this quick and easy vegetarian wrap is one that the whole family will love.

1/3 cup (75 mL) 2% plain Greek-style yogurt

2 tbsp (30 mL) olive oil

4 tsp (20 mL) lemon juice

1/2 tsp (2 mL) honey

1/2 tsp (2 mL) each ground cumin and coriander

1/2 tsp (2 mL) salt

1/4 tsp (1 mL) pepper

1 can (540 mL) chickpeas, drained and rinsed

1 Ambrosia Apple, core and diced

1 stalk celery, diced

1/3 cup (75 mL) pomegranate seeds

1/4 cup (60 mL) minced red onion

2 tbsp (30 mL) finely chopped fresh parsley

1. In large bowl, whisk together yogurt, oil, lemon juice, honey, cumin, coriander, salt and pepper; add chickpeas, Ambrosia apple, celery, pomegranate seeds, red onion and parsley. Toss well.


2. Scoop mixture into Inspired Greens Green Batavia Leaves.



• Add 1/4 cup (60 mL) chopped dried fruit, such apricots or dates, to chickpea filling if desired.

• Garnish with toasted almonds or pine nuts.
