1 lb (500 g) lean ground beef
1/3 cup (75 mL) finely chopped sun-dried tomatoes, in oil
2 tbsp (30 mL) each finely chopped fresh parsley and basil
1 tbsp (15 mL) Worcestershire sauce
1 clove garlic, minced
1/2 tsp (2 mL) each salt and pepper
16 leaves Inspired Greens Green Batavia
2 oz (60 g) goat cheese, crumbled
3 tbsp (45 mL) prepared pesto
1. Preheat grill to medium-high; grease grate well.
2. In bowl, combine beef, sun-dried tomatoes, parsley, basil, Worcestershire sauce, garlic, salt and pepper until well combined; shape into 8 burgers. Grill, turning once, for 8 to 10 minutes or until meat is cooked through.
3. Place each burger in centre of 1 lettuce leaf; repeat with remaining burgers. Top with goat cheese, pesto and remaining leaves.
For added crunch, make an easy quick pickle: Stir together 1/2 cup (125 mL) white vinegar and 1 tsp (5 mL) each salt and sugar. Microwave for 30 seconds to dissolve, then add 1/2 cup (125 mL) thinly sliced cucumbers, radishes or beets; let stand for 30 minutes at room temperature or refrigerate until ready to serve.
