Pepper Salad

sweet Peppers, creamy avocado and crisp apple combined with a bright, tangy dressing creates a delightful bowl of contrast in both taste and texture..

Ingredients:

Dressing:

2 Tbsp. Cider Vinegar

2 Tbsp. Honey

1 Tbsp. Olive Oil

1 Tbsp. Creamy Dijon Mustard

1 Tbsp. Lemon juice

Pinch Smoked Paprika

Pinch coarse ground Salt

Pinch course ground Pepper

 

Salad:

3 Seedless Sweet Mini Peppers cut into ¼ cm rings

½ container of Greens with a Kick

½ Ambrosia Apple, cored and diced into 2cm pieces

1 Avocado sliced into 1/2cm strips

1 Celery Stalk – cut on the bias into ½ cm pieces

1/3 cup toasted, sliced Almonds

1/3 cup shredded sharp Cheddar cheese

 

 

 

Directions:

  1. In a small bowl, whisk together dressing ingredients.
  2. Combine salad ingredients in a large bowl
  3. Drizzle dressing over salad and lightly toss before serving.
