1/3 cup (75 mL) olive oil
2 tbsp (30 mL) balsamic vinegar
2 tsp (10 mL) honey
1/4 tsp (1 mL) salt
1 large peach, pit removed and sliced
1 pkg Inspired Greens Multileaf Trio, chopped
1/4 cup (60 mL) fresh basil leaves
8 thin slices prosciutto, halved lengthwise
4 oz (125 g) baby bocconcini cheese, cut in half
1. In small bowl, whisk together oil, vinegar, honey and salt. In large bowl, toss peach slices with 2 tbsp (30 mL) vinaigrette.
2. Toss greens with 2 tbsp (30 mL) vinaigrette; arrange on serving platter. Scatter with basil leaves. Layer peaches, prosciutto and bocconcini over top; drizzle with remaining vinaigrette.
If desired, marinate peaches in vinaigrette for several hours before serving. Simply refrigerate until ready to assemble the salad.
